The early morning chill and abundance of apples on our tree tempted me into making a fall favorite. I know, I am not yet ready to say goodbye to Summer yet either, but the incoming season is my favorite!

Apple Crisp

7 tart apples, peeled, cored and sliced
4 teaspoons fresh lemon juice
1/2 teaspoon vanilla
1 cup brown sugar (I substituted 1/2 cup maple syrup)
1/2 teaspoon ground cinnamon
1 cup rolled oats
1/2 cup butter, room temperature

* Preheat oven to 375°F.

* In a mixing bowl, combine apples, lemon juice, and vanilla.

* Layer sliced apples in a 9 x 12-inch (or approximately the same size) baking pan.

* Combine brown sugar (or maple syrup), cinnamon, and oatmeal in a bowl. Cut in the butter. Sprinkle sugar mixture over apples.

* Bake 45 minutes or until topping looks crunchy and apples are tender.

Serve warm with whipped cream or vanilla ice cream.

We enjoyed ours with caramel vanilla ice cream yum! :)

  1. Mel–this looks great– I already have the apples and I think everything else I need–I will be making it tomorrow (my day off) –I need to get some vanilla ice cream–that sound delicious!! I am still always making your rice pudding recipe–I also make a little for my mom and substitute splenda for the sugar since she is diabetic–and she loves it!! XOXO
