Summer has turned to Fall early here in Brussels. With the cooler weather, I enjoy trying new soup recipes. Usually few ingredients are required, it can be prepared at a slow pace and smells great simmering on the stove. Soups are also a great way to get Alex to eat vegetables he would otherwise turn his nose up at…Bonus! I made this yummy Creamy Carrot Soup a few days ago and there were no leftovers to put away.

2lbs Carrot chopped into 1/2 inch pieces
Note: I added a pinch of parsley and a handful of chopped fresh spinach for some extra vitamins. Otherwise, the soup should turn out a vibrant shade of orange.
