in our kitchen :: creamy carrot soup

Summer has turned to Fall early here in Brussels. With the cooler weather, I enjoy trying new soup recipes. Usually few ingredients are required, it can be prepared at a slow pace and smells great simmering on the stove. Soups are also a great way to get Alex to eat vegetables he would otherwise turn his nose up at…Bonus! I made this yummy Creamy Carrot Soup a few days ago and there were no leftovers to put away.

Hope you have a chance to try it. Enjoy!

2lbs Carrot chopped into 1/2 inch pieces

1 3/4 Cups Chopped Sweet Onion (Vidalia) & 1 Tbsp EVOO in Dutch Oven over medium heat.

Carrots, Onion, Parsley & Spinach: Cook for about 10 minutes.

2 Cups each Water & Chicken Broth:  Cover & simmer about 25min or until carrots are tender. Then cool mixture.

2 Tbsp Heavy Cream & Half the mixture in the blender.  Return mixture to Dutch Oven and puree other half of mixture.

Simmer pureed mixture until thoroughly heated.

Note: I added a pinch of parsley and a handful of chopped fresh spinach for some extra vitamins. Otherwise, the soup should turn out a vibrant shade of orange.

What is your favorite soup recipe?  If you’d like to share it, I’d love to post it!

Love to all,
