Preheat the oven to 425F.

Cube 1 large sweet potato and place on bottom of roasting pan.

Sprinkle with light brown sugar.

Add roasting pan rack. Add one medium sized bird rubbed with butter, salt and pepper. Optional to add thyme sprigs under the skin of the bird.

Roast for 1 to 1.5 hours. Bird is done when thermometer reads 160F. Let sit for about 10 minutes before carving. We like to split it in half and serve “Halb Hanchen” (half chicken)
