The gray, cold months of winter give me cravings for comfort food. Pierogi is near the top of my list of favorites. Although time consuming to make, the yummy goodness is worth it:)

You can fill a pierogi with just about anything. Our favorites include sauerkraut & potato, crumbled bacon with potato & cheese, and potato & cheese with caramelized onions. The latter is what I’ve described making here.

First I prepared the caramelized onions. This smells divine while cooking and you won’t be able to stop yourself from taste testing.

Here’s the technique I followed for caramelizing the onions.

Onions sliced and ready to caramelize for the pierogi filling.

Onions are caramelized and jamlike. Yum!

Refrigerate in an airtight jar for up to 2 weeks.

Now it is time to make the dough and potato and cheese filling. Here is the recipe I follow.

Using a biscuit cutter to get that perfect sized pierogi.

Saute in butter until golden brown.

Top your scrumptious pierogies with a dollop of sour cream and ENJOY!

Great blog – we really enjoyed reading everything and seeing all of you (well we didn’t see you Mel!!) the pierogies look delicious – so much for Stan’s in Northfield!! – we were not able to view the videos, however – probably because of the laptop we brought to FL.   2. Those pierogies look great! I like the blog idea too. It is a good way to drag the rest of us into the 21st century!!! How about a section called Andy’s Corner where Andy samples and approves or disapproves of all of Mommy’s culinary creations. I smell a new Food Network show….

The lotion you guys sent me works wonders on the onion smell on my fingers from chopping, thanks! A Food Network show…I like your thinking and so does Andy.   3. Yummy! Looks good, I will have to make some. I miss yall so much. The boys have grown up Andrew is no longer a baby, where does the time go? I hope to come visit this year and you will have to show me around Belgium and maybe do some other site seeing.
